WHere is an easy version of a drink from the seasonal cocktail list. It's a party-sized prepared mix that's bursting with tastes associated with festive period, rendering it perfect for hosting a holiday party. Save the extra cordial to use in breakfast cocktails, puddings, or to mix more rounds of bikinis.

Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Combine all the components into a pan, bring to a gentle boil, stirring so the sugar melts. After that, take off the burner and leave to cool down fully. Transfer to a sealable bottle, seal keeping it chilled, it will last for up to one month.
Preparing the Batch Mix: Mix every spirits and syrup in a large bottle, let it rest for 60 minutes, then pass it through preferably using muslin, to ensure it's perfectly clear.
To serve: Measure 85ml of your cocktail base into your mixing glass filled with ice, and stir lightly for a minute until cold. Filter into a frosted cocktail glass or similar, top with some cranberries and finish using a brief mist with the mandarin essence over the drink.
